    Psyllium husk jelly, layered with fresh fruit

    Psyllium Husk Jelly

    A simple, fibre-rich jelly that sets in minutes. It's an easy way to help ease constipation, a common side effect of anti-inflammatory pain medication, and to keep your bowels moving during a creatine loading phase.

    Prep time5 minutes
    Set time20 minutes

    Ingredients

    • 200ml orange or apple juice
    • 10g psyllium husk (about 2 heaped tsp)
    • ½ tsp vanilla extract or a pinch of cinnamon, optional
    • Fresh fruit, to serve

    Method

    1. Pour the juice into a small bowl or jug.
    2. Sprinkle over the psyllium husk while whisking continuously. It thickens fast, within 30 to 60 seconds, so keep whisking until smooth.
    3. Stir through the vanilla or cinnamon, if using.
    4. Pour into a small jar or glass.
    5. Chill in the fridge for 20 minutes to firm up fully.
    6. Top with fresh fruit just before serving.
    Why it's useful: This is an easy way to include a high-fibre food during a creatine loading phase, alongside plenty of water. It keeps in the fridge for up to 2 days, so it's worth making a batch ahead.
